Why This Works So Well

The Dark & Stormy is one of rum's great stage sets — a cocktail built to let a quality spirit speak for itself. Most versions hide the rum behind cheap, overpowering ginger. Not this one.

Devil's Bridge Spiced Rum was aged six years in ex-bourbon barrels, then finished in Wales with bara brith spice and warming botanicals. That depth doesn't just survive the ginger beer — it rises through it. You get warmth, complexity, and a finish that no blend spirit can touch.

It's one of the easiest spiced rum cocktails you'll ever make. And one of the most impressive you'll ever serve. The key is good ginger beer (not ginger ale — the difference is significant) and plenty of good ice. Do those two things right and the rum does the rest.

Premium ginger beer 150ml
Fresh lime juice ½ lime
Ice Plenty

Method

Fill your glass

Take a tall highball glass and fill it to the brim with ice cubes. More ice means a slower dilution and a colder, better drink.

Add the rum

Measure and pour 50ml of Devil's Bridge Spiced Rum over the ice. Take a second to appreciate the colour.

Float the ginger beer

Pour 150ml of ginger beer slowly over the back of a spoon. This creates the classic dark-over-light layered look.

Finish & garnish

Squeeze in half a lime and drop the wedge in the glass. Serve immediately before the layers combine.

Use large cubes or a single big block if you have one. More surface area = slower melt = better drink from first sip to last.

Ginger Beer, Not Ale

Ginger ale is too sweet and flat. You want the heat and carbonation of a proper ginger beer — Fever-Tree or a craft brand works brilliantly.

Bottled lime juice is acidic in a flat, dull way. Fresh lime has brightness and aromatic oils that lift the entire cocktail. Don't skip it.
